Sinigang, bulalo among TasteAtlas's 50 best soups in the world

Sinigang, including the sinigang na baboy, and bulalo are again among the best soups in the world, according to an aggregated food guide.

On TasteAtlas's 50 Best Soups list for August, sinigang (collectively) placed 17th, while sinigang na baboy in particular ranked 38th. Bulalo was on the 37th spot.

Sinigang placed 11th and bulalo placed 17th in the November 2023 best soups list. They were also named best soups in August 2022.

In its citation for this month's rankings, TasteAtlas noted sinigang's key ingredients, including the sampaloc fruit and the rice washing used for the basic broth.

"Ingredients such as pork, fish, milkfish, shrimp, chicken, or beef may also be added to the soup," it said. "It's an often seen dish at special occasions such as birthdays or weddings, and over time, as the dish became more popular, there were new variations that used guava or raw mango."

It mentioned how sinigang's sour lightness "perfectly [match] the harsh tropical heat of the country," making it a "unique soup that is a true representative of Filipino cuisine."

The sinigang na baboy, meanwhile, was also compared to the Malayisan dish called siniggang.

As for bulalo, TasteAtlas mentioned its preparation of cooking beef shanks and marrow bones "until the fat and collagen dissolve into the broth, resulting in a robust flavor of the dish."

It noted that it's a specialty of the Luzon region, and that it's found in most upscale restaurants since beef shanks and marrow aren't among the cheapest cuts of meat in the country.

Paraguay's Bori-bori—a hearty soup filled with meat, fluffy dumplings with cornmeal and cheese, vegetables like carrots, celery, and onions, and a soup flavored with bay leaves, cloves, parsley, and colored by saffron—topped the list.

TasteAtlas has recognized Philippine cuisine several times. Last June, it named silvanas among the best cookies in the world.

In 2022, it placed the Philippines in the 19th spot of its 50 best cuisines.
