New food and drinks at Solaire Resort

Solaire Resort Entertainment City’s BRB (Baccarat Room and Bar), a speakeasy bar fondly remembered and frequented by lovers of unique cocktail concoctions, presents eight new alcoholic beverages and three zero-proof drinks for their first anniversary. They also launched the second edition of BRB’s “newspaper.”

In collaboration with well-versed bartenders from Employees Only Singapore, Drink Collectiv, and No Entry Cocktail Club BGC, Solaire Resort Entertainment City takes nightlife aficionados to a drinking experience with these artisanal creations featuring botanical elements harvested from Solaire Greenhouse, a facility that recently earned the distinguished Philippine Good Agricultural Practices (PhilGAP) certification.

BRB’s lineup of signature drinks includes Loophole, a delicate, herbal, and bright sparkling blend with vibrant notes of citrus. The Wizard, with a mix of nutty, fruity, bittersweet, rich, and jam flavors, is perfect for those who enjoy layered tastes. The Thomas 1869 blends Grey Goose Vodka, green grape, Vermouth, and Fino Sherry. The First Woman, inspired by Jeannette Rankin (the first woman to hold federal office in the United States), is another option that combines floral and savory notes.

If you are steering clear of spirits, The Quiet Remedy is a nice alternative. This drink is infused with sober whisky, Kaffir lime, leaf ginger, and lemongrass that strike a perfect balance between bold aromatics and a clean restorative finish.

For those who seek familiar and comforting pours, established BRB favorites, including BRB Irish Coffee, are available. Served hot or cold, this glass is a mix of Kapeng Barako, one of the Philippines’ iconic coffee varieties, local coconut palm sugar, toasted coconut cream, and powder garnish. Among the classics are Unripe, with green mango and Bombay Sapphire gin; and Acai Atelier with house-made acai green tea and hibiscus.

BRB welcomes everyone who appreciates fine cocktails and even finer company, one glass at a time. 

Meanwhile, Italy’s island streets go to Finestra’s fine dining table. This season, Finestra at Solaire Resort Entertainment City brings the culinary traditions of Italy’s islands to the table through Isole, the newest chapter of its year-long “A Taste Across Italy Series.” Finestra’s Italian chef Andrea Spagoni created the three-course sharing experience that celebrates the honest flavors of Sicily and Sardinia, elevating beloved regional and street food traditions through refined techniques and contemporary craftsmanship.

The limited-time menu begins with a trio of antipasti that captures the vibrant coastal character of southern Italy. Delicate amberjack Carpaccio is paired with fennel and pine nuts, while Caponata—a beloved island staple of chopped fried eggplant and other vegetables in tomato sauce— is reimagined atop crispy toast with king prawns and spicy jam. The appetizer course is Panelle, the iconic chickpea fritter often enjoyed from neighborhood street vendors, enhanced with parsley emulsion and fried capers.

At the heart of the experience is artisanal Fregola (my favorite Sardinian pasta that is shaped into little balls the size of tapioca) with clams. This unique handcrafted pasta specialty reflects the islands’ enduring connection to the sea through briny seafood flavors and a more savory depth by adding bottarga or dried mullet roe. Alongside it, wood-fired roasted lamb rack and pork belly pay tribute to centuries of pastoral tradition, complemented by seasonal fava beans and zucchini salad that embody the rustic elegance of Italian cooking.

Dessert is Seadas, a rustic pastry originating from pastoral communities where sheep’s milk cheese and honey have long been local staples. Finestra elevates this with pecorino mousse and honey glaze, offering a sophisticated interpretation and a delicate balance of sweet and savory. This was, in fact, the highlight of my meal, and the taste lingered long after the final bite.
