At Opal Bar in Poblacion, you can enjoy great cocktails and easy conversations
Nowadays, trentahins and quarentahins crave bars where they don’t have to shout over the music. While they might claim to have retired from the party scene, they still appreciate a good drink paired with genuine company—and conversations you can actually hear.
Out of the many nightlife spots in Poblacion, one bar captures this balance best: Opal Bar.
"We want great conversations, with drinks, and for people to talk about the different flavors and just catch up," explained owner Andoy Yupangco.
The bar's interior is lush, soothing, and intentionally tuned: even the sound system, he said, is set at a volume that encourages effortless kwentuhan, whether you are on a date, out with old friends, or catching up with a partner.
"We want to bring, at certain times, late in the night, a little high energy. But overall, cozy and relaxed and intimate," he said, describing the space.
Opal Bar, which opened in 2025, arrives at a time when the local cocktail scene is rapidly expanding. Opal regularly elevates the local scene by hosting guest bar takeovers with top mixologists from around the world—giving patrons a taste of global flavor profiles from other countries without ever leaving Manila. In April, Toru Ariyoshi of Bee’s Knees Kyoto hosted a takeover, and back in February, they collaborated with Hope & Sesame Guangzhou for Philippine Cocktail Week 2026.
"The cocktail culture is growing; not as big as other countries, but it's growing," Yupangco said.
"I think, especially now, there's different bars bringing over bartenders abroad. From there, [guests] get to taste flavors of different countries of China, Japan. There's a whole group of people who are always attending those because you can really get a taste of their culture," Yupangco added.
Head mixologist Rica Querce and the team would spend about six months on research and development to curate a menu rooted in refined, complex flavors, relying on house-made infusions and unexpected ingredient combinations. Yupangco's personal favorite is the AroyMa, a vibrant, Thai-inspired savory-spicy blend of tequila, pandan, galangal, lemongrass, green chili, melon, and tomato.
Another crowd-favorite is HobGob, a smoky Amaretto Sour, mixing mezcal with red berries, pineapple, yuzu, lime, and egg whites.
Then there's Kintsugi for the gin lovers, and Turn the TV On, which has an interesting mix of peanut butter-infused bourbon, Earl Grey, cereal milk, and chocolate garnish.
This thoughtful balance of atmosphere and craft has made Opal Bar a go-to for an eclectic mix of guests—from local creatives, professionals, to foreign cocktail tourists seeking out curated cocktail drinks.
