By just its name, you get a clear idea of what China Blue offers: authentic Chinese cuisine served with the azure seascape of Manila Bay in the background. One of the five restaurants in Conrad Manila Hotel, China Blue is the brainchild of Shanghai-based Hong Kong-Singaporean Chef Jereme Leung, the pioneer of modern Chinese cuisine in Asia. In September 2024, he launched The Emperor’s Table, a new specialty menu for the restaurant that celebrated his expert approach to fusing contemporary techniques with culinary traditions.  

While The Emperor’s Table was always supposed to have a limited run, China Blue continues to offer other signature dishes expertly innovated by Chef Jereme. Start your meal with the bestselling spicy-sweet Crispy fried shrimp, wasabi with mango salsa. Follow this up with the excellent hand-wrapped dim sum selection. The Peking duck is in a class of its own, with crispy golden-brown skin embracing juicy, melt-in-your-mouth meat. And for when you feel like you deserve to splurge, there is the delicious line-up of lobster, abalone, suckling pig, and seabass. Recognized by the World Luxury Restaurants Awards, China Blue’s menu is a delightful surprise. It blends classic and traditional Chinese flavors with modern fare that will keep you coming back for more.
