Pâtisserie Le Choux-Colat

At Pâtisserie Le Choux-Colat, international award-winning pastry chef Ely Salar shows he’s as serious about quality as he is about fun. The Entremet cakes are flawless, while the Gâteaux de Voyage or travel cakes have just the right temperatures and textures to make them last long even without refrigeration. The praline chocolates, meanwhile, are finely crafted to deliver sweet, crunchy, and other surprising hints in every bite.

As you step into the pastry shop, you would know it’s decidedly French from its name, menu, and old-meets-new charm. But once you indulge in its offerings, you’d be surprised by how it’s also Filipino in the best ways possible. The chocolate maker and chocolatier, after all, sustainably sources cacao beans and other ingredients from his own farm, El Fortunella, in Leyte. You can best experience this delectable mix of French and Filipino traditions when you pair its Signature Tsokolate with Calamansi Bavarian Gâteaux de Voyage or its Tablea Café Mocha with Original Chocolate Entremet Cake.
