Toyo Eatery is infused with local flavors in the best way. It uses ingredients sourced from local farmers and artisans and prepared using modern Filipino techniques. Run by couple Jordy and May Navarra, the restaurant offers both á la carte and tasting options from a continually evolving menu. If it’s available, see to it that you try their Sabaw at Mais, which combines sweet corn from Quezon, seasoned rock salt from Guimaras island, and a rich vegetable broth. Kilaw na Tanigue is also a winner; so is their crab dish, Alimasag, taba ng talangka, gata. Toyo Eatery’s decision to remove beef led to a menu where half the dishes are now vegetarian or vegan.
